Ramblings

The weather around here has been psychotic.  Winter one day, spring the next, then back to winter.  But we are moving inexorably towards warm, sunny days.  

When I walk through the neighborhood I see daffodils and forsythia.  It’s lovely.  

But that house I showed you, the one that was still decorated for Christmas in March?  The decorations are still up!  Last year they took everything down on Good Friday.  This year, it’s two days after Easter and they still have candy canes and Christmas trees on display, 

Can’t wait to wear all those new spring/summer outfits. And sandals,  Though I have to stop shopping.  My closet is full.

 I doubled the recipe for matzoh brei, and it came out like a frittata.  Leftovers reheat nicely in the microwave. Lesson of the day, don’t be afraid to try things in the  kitchen. 

Next up, matzoh pizza.  Simple recipe, just put pizza sauce and cheese on a sheet of matzoh.   I’ve never tried it, not with real matzoh or gluten free. It wasn’t a thing when I was growing up, but it’s all over the internet now. Looked good.


Tasted good, but I wasn’t overly impressed.  I might make it again.  But the finished product didn’t live up to the hype.

At least Passover will be over soon.  I’ve got a gluten free challah mix I’m waiting to try.

I haven't tried a matzoh pizza, but I love a recipe I have for Passover "Mac and cheese" which is made with alternate layers of matzoh and a filling of cottage cheese, sour cream (I substitute nonfat plain Greek yogurt) egg and shredded cheese. You then put more cheese on top and bake. It's sort of like a Passover lasagna and I could see it being a lasagna without the yogurt/sour cream and with tomato sauce.
